well, i will try to answer your question. from what i learn here (according to the requirements that has been stated by the tourism ministry on 1986)is you have to buy tableware in amount of 2,5 times your seating capacity which is 100 pax, so 2,5 x 100 = 250 peaces for each item (soupspoon, dinnerspon, fishknife,etc etc). i hope its usefull
